Description

A quick and easy family-friendly beef curry that features tender beef chuck simmered in a rich blend of spices and creamy coconut milk.


Ingredients

  • 1.5 lbs beef chuck, cut into chunks
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • 1 cup beef broth
  • Salt and pepper to taste
  • 1 tbsp tomato paste
  • 1 tsp sugar (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Sear the Beef: In a large pot, heat the vegetable oil over medium-high heat. Add the beef chunks and brown them for about 5-7 minutes, turning occasionally until they develop a nice crust.
  2. Sauté the Aromatics: Transfer the beef to a plate and add the chopped onion to the pot. Sauté the onion for 3-4 minutes until translucent. Add minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the Spices: Stir in curry powder, turmeric, paprika, cumin, and coriander. Cook for 1 minute to release their flavors.
  4. Combine Ingredients: Return the beef to the pot. Add diced tomatoes, coconut milk, beef broth, and tomato paste, stirring to coat the meat with sauce.
  5. Simmer the Curry: Bring to a boil, then reduce heat and cover. Simmer for about 60 minutes.
  6. Final Adjustments: After simmering, taste and add salt, pepper, and sugar as needed. If a thicker sauce is desired, let it simmer uncovered for another 10-15 minutes.
  7. Serve and Garnish: Remove from heat and serve with rice or flatbread, garnished with chopped cilantro.
