Description

Cozy sweet potato and cranberry gratin with warm cinnamon, creamy sauce, and a golden cheesy breadcrumb topping.


Ingredients

2 lbs sweet potatoes, peeled and sliced

1 cup fresh cranberries

1 cup heavy cream

1 cup shredded Gruyère cheese

1/2 cup breadcrumbs

1/4 cup brown sugar

1 tsp cinnamon

Salt and pepper, to taste


Instructions

1. Preheat the oven to 375°F (190°C) and lightly grease a medium baking dish.

2. Bring a large pot of water to a gentle boil, add the sliced sweet potatoes, and cook for 10-15 minutes until tender but not falling apart, then drain well.

3. Layer half of the sweet potato slices evenly in the prepared baking dish.

4. Sprinkle half of the fresh cranberries over the sweet potatoes.

5. In a bowl, whisk together the heavy cream, brown sugar, cinnamon, salt, and pepper until smooth and well combined.

6. Pour half of the cream mixture evenly over the sweet potatoes and cranberries.

7. Repeat the layers with the remaining sweet potatoes, cranberries, and the rest of the cream mixture.

8. Top the gratin with shredded Gruyère cheese and breadcrumbs, spreading them evenly.

9. Bake for 30-35 minutes, or until the top is golden brown and bubbling; let cool a few minutes before serving.

Notes

Use frozen cranberries if fresh are not available.

Slice sweet potatoes evenly so they cook at the same rate.

Swap Gruyère for mozzarella or cheddar for a more budget-friendly version.
